Korean BBQ Meatloaf Muffins

Ingredients:

  1. Heat an oven to 400F. Spray a muffin pan with cooking spray.
  2. Combine the turkey, garlic powder, ginger powder, and 1/2 cup of Korean BBQ sauce in a bowl.
  3. Spoon into the muffin pan. Cover with foil to prevent the tips from charring.
  4. Bake at 400F for approximately 20 minutes. Remove the foil. The spoon the remainder of the Korean BBQ sauce on to the tops of the muffins.
  5. Bake for 5 minutes longer without the foil or until the internal temperature of the turkey reaches 165F.
  6. Serve with 1/2 cup of rice per person and a side salad.
