Cook the yellow rice according to package instructions. Set aside.
Rinse and drain the can of black beans.
Add the black beans, chicken broth, and adobo sauce only to a medium sauce pan. (Optional: add a diced chipotle chili to add more spice to the black beans!)
Cook over medium high heat until warm.
Serve 1/2 cup of black beans with 1/2 cup of rice and mixed greens. Drizzle with fresh lime juice.
