I love dishes that are both (1) healthy and (2) one pan…easy clean up and downright good for you! WW Points = 12!

Makes 4 Servings
- 12 ounces ground bison
- 1/2 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can corn kernels
- 2 tbsp tomato paste
- 2 cups spinach, chopped coarsely
- 1 package taco seasoning, low sodium
- 1/2 cup cheese, part skim milk
- water
- Cooking spray
Instructions:
- Using a large skillet, brown the bison and onions over medium-high heat. Drain off the drippings.
- Add to the skillet the black beans, corn, and tomato paste. Stir to combine.
- Then add the taco seasoning and water according to package directions.
- Once the skillet is heated through, sprinkle with cheese. Add a lid to the skillet and cover until the cheese is melted.
- Garnish with guacamole or low fat sour cream for extra tastiness!
