Healthy One Pan Taco Tuesday

I love dishes that are both (1) healthy and (2) one pan…easy clean up and downright good for you! WW Points = 12!

Makes 4 Servings

  • 12 ounces ground bison
  • 1/2 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn kernels
  • 2 tbsp tomato paste
  • 2 cups spinach, chopped coarsely
  • 1 package taco seasoning, low sodium
  • 1/2 cup cheese, part skim milk
  • water
  • Cooking spray

Instructions:

  1. Using a large skillet, brown the bison and onions over medium-high heat. Drain off the drippings.
  2. Add to the skillet the black beans, corn, and tomato paste. Stir to combine.
  3. Then add the taco seasoning and water according to package directions.
  4. Once the skillet is heated through, sprinkle with cheese. Add a lid to the skillet and cover until the cheese is melted.
  5. Garnish with guacamole or low fat sour cream for extra tastiness!
