Sheet Pan Dijon Balsamic Chicken Thighs

Makes 4 Servings

Ingredients:

  • 12 chicken thighs, boneless skinless (3 per person)
  • 1/4 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 2 teaspoons honey (substitute maple syrup or agave)
  • 1 teaspoon garlic, minced
  • 1 tablespoon olive oil

Instructions:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper or foil.
  2. In a small bowl, whisk to gather the balsamic vinegar, Dijon mustard, honey, garlic, and olive oil.
  3. Arrange the chicken thighs on the baking sheet. Brush the chicken with the mustard and vinegar mixture.
  4. Bake for approximately 20 minutes or until a thermometer inserted into the thickest part of the chicken registers 165F.
  5. Serve with your favorite vegetable medley and healthy starch (rice, sweet, potato, quinoa).
  6. Enjoy!
