Makes 4 Servings
Ingredients:
- 12 chicken thighs, boneless skinless (3 per person)
- 1/4 cup balsamic vinegar
- 1/4 cup Dijon mustard
- 2 teaspoons honey (substitute maple syrup or agave)
- 1 teaspoon garlic, minced
- 1 tablespoon olive oil
Instructions:
- Preheat oven to 400F. Line a baking sheet with parchment paper or foil.
- In a small bowl, whisk to gather the balsamic vinegar, Dijon mustard, honey, garlic, and olive oil.
- Arrange the chicken thighs on the baking sheet. Brush the chicken with the mustard and vinegar mixture.
- Bake for approximately 20 minutes or until a thermometer inserted into the thickest part of the chicken registers 165F.
- Serve with your favorite vegetable medley and healthy starch (rice, sweet, potato, quinoa).
- Enjoy!
