One of my favorite meals for rainy days…filling, satisfying, and makes my entire home smell like homecooked goodness.

Makes 4 Servings
Ingredients:
- 1 cup lentils, dried
- 32oz vegetable broth
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/2 cup sweet onion, diced
- 1 large sweet potato, cubed
- 2 cups spinach, chopped
- 2T garlic, minced
- Cilantro to garnish
Instructions:
- Place the lentils and vegetable broth in a stock pot. Cover and bring to a boil.
- Reduce heat to low and simmer until tender (approximately 30 minutes).
- Add garlic, onions, celery, carrots, and sweet potato to the stock pot. Simmer until the sweet potatoes are tender (approximately 30 minutes).
- Add spinach and stir until wilted.
- Serve in a soup bowl and top with cilantro, if desired.
- Best savored in a cozy chair next to a rain dappled window. 🙂
