One of my favorite meals for rainy days…filling, satisfying, and makes my entire home smell like homecooked goodness.

Makes 4 Servings

Ingredients:

  • 1 cup lentils, dried
  • 32oz vegetable broth
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/2 cup sweet onion, diced
  • 1 large sweet potato, cubed
  • 2 cups spinach, chopped
  • 2T garlic, minced
  • Cilantro to garnish

Instructions:

  1. Place the lentils and vegetable broth in a stock pot. Cover and bring to a boil.
  2. Reduce heat to low and simmer until tender (approximately 30 minutes).
  3. Add garlic, onions, celery, carrots, and sweet potato to the stock pot. Simmer until the sweet potatoes are tender (approximately 30 minutes).
  4. Add spinach and stir until wilted.
  5. Serve in a soup bowl and top with cilantro, if desired.
  6. Best savored in a cozy chair next to a rain dappled window. 🙂
