Sheet Pan Pesto Chicken Breasts (Low Carb)

I am a big fan of sheet pan meals: easy to prep, easy to cook, easy to clean up. In short, sheet pan meals are an EASY BUTTON for dinner.


MEAL PREP TIP: Combine all ingredients into a plastic bag and refrigerate until ready to cook.


Ingredients:

  • 4 3oz chicken breasts (or turkey cutlets)
  • 1/4 cup pesto
  • 4 cups green beans, trimmed
  • 2 cups rice, cooked

Instructions:

  1. Heat oven to 400F.
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Arrange the chicken and green beans on the baking sheet.
  4. Spread the pesto over the chicken breasts. Sprinkle the green beans with garlic powder.
  5. Bake for approximately 20 minutes or until the chicken’s internal temperature reaches 165F.

Makes 4 Servings.

  • 1/2 cup pesto
  • 2 cup green beans

Instructions
 

  • Heat oven to 400F.
  • Line a baking sheet with parchment paper or aluminum foil.
  • Arrange the chicken and green beans on the baking sheet. Spread the pesto over the chicken breasts. Sprinkle garlic powder on the green beans and stir to combine.
  • Bake for approximately 20 minutes or until the chicken's internal temperature reaches 165F.
  • Optional: Serve alongside 1/2 cup of rice.
