Sheet Pan Island Shrimp

Ingredients:

  • 40 large shrimp (approximately 10 per person)
  • 2 tbsp garlic powder (divided)
  • 1 tbsp smoked paprika
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1/2 white onion, sliced
  • 1 bell pepper, sliced
  • 1 tablespoon olive oil
  • 2 cups rice, cooked (1/2 cup per person)
  • 1 tablespoon Lime juice
  • 1/4 cup Cilantro
  • Olive oil cooking spray

Instructions:

  1. Heat an oven to 400F. Spray a baking sheet with olive oil cooking spray. (Optional: line with aluminum foil for easy clean up.)
  2. Toss the zucchini, squash, onions, and bell pepper in olive oil and 1 tablespoon of garlic powder. Arrange on the baking sheet.
  3. Season the shrimp with 1 tablespoon garlic powder and smoked paprika. Arrange on the baking sheet.
  4. Bake for approximately 5 minutes and then turn over the shrimp. Bake for another 5 minutes until the shrimp are opaque.
  5. Serve in bowls with 1/2 cup of rice per person. Garnish with a squeeze of fresh lime and cilantro.
