In the Florida Keys, we are only 90 miles north of Havana. Naturally, our neighbors from the South brought with them their rich and flavorful food. Cuban Rice Balls are typically made with pork and deep fried. But this is my healthy take on this Cuban staple – and rest assured I have not skimped on flavor!
Ingredients:
- 1 pound ground turkey
- 2 cups rice, cooked (I use Uncle Ben’s Ready Rice to save time!)
- 2 tablespoons Mrs. Dash Garlic & Herb Seasoning
- 1 teaspoon cumin
- Olive oil cooking spray
- Sriracha dipping sauce (optional)
Instructions:
- Heat the oven to 400F. Line a baking sheet with foil or parchment paper. Spray with olive oil cooking spray.
- In a large mixing bowl, combine the turkey, rice, and seasoning.
- Using a spoon or ice cream server, scoop balls of meat and rice then roll in your hands into a ball.
- Bake at 400F until the internal temperature reaches 165F (approximately 20 minutes).
- Serve with your favorite Sriracha mayo dipping sauce (optional) for a little kick of heat!
