A heart-healthy meal with a bit of a kick!

Ingredients:

  • 1 can black beans
  • 2 cups yellow rice, cooked
  • 1 can chipotle chilis in adobo sauce
  • 1/2 cup chicken broth
  • Lime juice
  • mixed greens

Instructions:

  1. Cook the yellow rice according to package instructions. Set aside.
  2. Rinse and drain the can of black beans.
  3. Add the black beans, chicken broth, and adobo sauce only to a medium sauce pan. (Optional: add a diced chipotle chili to add more spice to the black beans!)
  4. Cook over medium high heat until warm.
  5. Serve 1/2 cup of black beans with 1/2 cup of rice and mixed greens. Drizzle with fresh lime juice.

Makes 4 servings.
