Sheet Pan Key West Chicken

Incorporate a little taste of the islands during the winter months with this Sheet Pan Key West Chicken…from my winter hometown!

Ingredients:

  • 4 Chicken Breasts
  • 1/2 cup honey
  • 1/2 cup low sodium soy sauce (or Tamari for gluten free)
  • 1/4 cup lime juice
  • 1 teaspoon garlic, minced
  • 1/2 pound Asparagus, trimmed
  • 1 teaspoon garlic powder
  • 1 tablespoon Olive oil
  • Olive Oil cooking spray

Instructions:

  1. In a glass container or plastic bag, combine the honey, soy sauce, lime juice, and garlic.
  2. Pound the chicken with a meat tenderizer until thin and uniform in thickness. Marinade the chicken in the glass container or plastic bag in the refrigerator for at least 30 minutes.
  3. Preheat oven to 400F. Spray a baking sheet with olive oil cooking spray.
  4. Place the asparagus in a glass bowl. Drizzle with olive oil and garlic powder.
  5. Arrange the chicken and asparagus on the baking sheet. Bake for approximately 20 minutes or until the chicken reaches an internal temperature of 165F.
