
Incorporate a little taste of the islands during the winter months with this Sheet Pan Key West Chicken…from my winter hometown!
Ingredients:
- 4 Chicken Breasts
- 1/2 cup honey
- 1/2 cup low sodium soy sauce (or Tamari for gluten free)
- 1/4 cup lime juice
- 1 teaspoon garlic, minced
- 1/2 pound Asparagus, trimmed
- 1 teaspoon garlic powder
- 1 tablespoon Olive oil
- Olive Oil cooking spray
Instructions:
- In a glass container or plastic bag, combine the honey, soy sauce, lime juice, and garlic.
- Pound the chicken with a meat tenderizer until thin and uniform in thickness. Marinade the chicken in the glass container or plastic bag in the refrigerator for at least 30 minutes.
- Preheat oven to 400F. Spray a baking sheet with olive oil cooking spray.
- Place the asparagus in a glass bowl. Drizzle with olive oil and garlic powder.
- Arrange the chicken and asparagus on the baking sheet. Bake for approximately 20 minutes or until the chicken reaches an internal temperature of 165F.
Makes 4 servings.
